As a college girl on the go, I’m always looking for an easy, yummy dinner fix. I typically don’t eat dinner until at least 10pm, and by then, I do not feel like cooking! But hello, eating out every night is expensive, not to mention gross! That’s why I developed a love for my Crockpot!

Whether you’re just planning dinner for yourself or a big group, a Crockpot can go a long way. Try out this easy recipe for yummy Southern jambalaya!

What you’ll need:

1 pound uncooked chicken, cut into cubes

1 pound sausage

1 28oz can diced tomatoes, with juice

1 chopped onion

1 cup chopped celery

1 cup chicken broth

2 teaspoons oregano

2 teaspoons parsley

2 teaspoons Cajun seasoning

1 teaspoon cayenne pepper

1/2 teaspoon thyme 

2 boxes Rice a Roni fried rice. 

Preparation

All you have to do is throw everything except the rice into your slow cooker, and let it cook on low for 8 hours. Mix up the rice, then mix everything together when it’s all done cooking.

This a great recipe to feed a crowd because it makes a lot. If you’re just cooking for yourself, or yourself and your roomie, there’s enough for the both of you and some left over. This recipe is so easy to reheat in a microwave, too!

    i use my crockpot all the time! i work 12 hr nights at the hospital, so it’s definately used a lot when i’m sleeping during the day!
