How to…Cook: Grilled Cheese and Tomato Sandwich

One of the first meals I ever learned to cook was a grilled cheese sandwich. But, as we get older, our tastes mature, and a grilled-cheese sandwich just doesn’t cut it. So, here is my recipe for an updated-grilled-cheese: a little bit of a twist to make it more interesting, but the same simple steps and familiar taste you love.

Grilled Cheese and Tomato Sandwich

makes 1 sandwich

Tools:

stove or hot plate

frying pan

spatula

Ingredients:

♥ 2 slices fresh, crusty bread

♥ ½ tbsp margarine

♥ 3 slices real cheddar cheese

♥ ½ tomato, sliced

♥ ½ tbsp mayonnaise

Directions:

1. Start by slicing the cheese, tomato, and bread so everything is prepped and ready to go.

2. Heat up the frying pan to medium-high heat.

3. Spread the margarine on the outside of each bread slice, and the mayonnaise on the inside.

4. Layer the cheddar and tomato slices inside the bread, and put the sandwich in the hot pan.

5. Cook each side until golden brown, and the cheese begins to melts (about 2 minutes per side).

What Do You Think??

Such a quick and easy recipe but it is one of my favourite for a quick lunch. Pair it with some raw veggies, fruit, or a small salad for a healthy meal that’s quicker than mac and cheese. How to…Make the Most of Your Sundays

Sunday is probably one of the most overlooked days of the week, but it is easily one of the most important. Sunday gives you an opportunity to take advantage of a free 24-hours that isn’t designated to any specific activity. You don’t usually have work or school, but there isn’t the pressure to go out like on Friday and Saturday. Instead of watching TV for 6 hours straight, take a look at some of my ideas to make the most of your Sundays, which can benefit you all week long.

Nurse a Hangover

In college, chances are you’ll wake up at least one Sunday morning with some reminders of the fun you had the night before, in the form of headaches, nausea, vomiting, and fatigue. While the best cure for a hangover is time, there are ways to speed up the healing process. Drinking lots of water is the first crucial thing, as alcohol dehydrates your body, causing a lot of the terrible symptoms. Drink as much water as you can down in the day and you’ll start to slowly feel better. Aspirin or Tylenol can usually take the edge off of a bad headache. Check the label to see the dosage, but you can typically take a new dose every 4 hours. For an upset stomach, I have found that starchy foods with a salty flavour work the best, although these aren’t the healthiest option. If you want to go for a healthier choice, fresh fruit is high in water content and can up your hydration. Bananas are especially beneficial for their high levels of potassium and sugar, which are depleted after a night of heavy drinking. Finally, a short walk in the fresh air can do wonders for a sorrowful body. You may think that laying in bed all day is the only solution, but try a few of these options before crawling back under the covers.

Get Organized

You don’t want to start your week without preparing at all for what lies ahead. Take a few minutes on Sunday to look at what you’ve got planned for the week, and organize yourself accordingly. Make notes in a planner or calendar and double check any assignments or appointments you need to remember. It doesn’t take a lot of time, but organizing your plans for the week on a Sunday saves you a lot of stress later on, and make Monday morning a breeze.

Find Some Zen

Between school work, parties, boys, and family, college can get hectic at times. If you can find an hour or so on a Sunday, it is a perfect time to zone-out and find some peace. Turn off all electronics (TV, computer, even your Blackberry) and maybe light some candles. If you want, put on some relaxing music, and spend this time alone. Try to meditate on things other than the immediate stressors in your life. Focus on future goals and things to look forward to (like Summer vacation) while pushing out any thoughts that pop up about obstacles, or things you need to achieve before then. Even if you only spend 15 minutes, taking some personal time to reflect and relax can give you new energy and enthusiasm to tackle the challenges of the week ahead.

Catch Up

Sometimes it seems like the people we live with are the ones we see the least. If your roommates and you have different schedules that are all equally busy, it can be hard to find the time to really hang out. Sundays can be a great opportunity to catch up: maybe go see a movie together, have a “family dinner” and all cook together, or just chat for awhile about the week you’ve had. If you make an effort, Sundays may become your favourite day of the week for re-connecting and bonding with your roomies.

Plan Your Outfits

Remember when you were little, and your Mom would lay out your clothes for you the night before school? Well, sometimes we may wish we had someone to pull outfits for us every night now. I like to spend some time on Sundays trying on clothes in different outfits, layering different ways, and thinking of new outfits to wear throughout the week. You can take photos of the outfits you create for quick reference on a busy weekday morning. Not only is this a fun way to spend an hour or two, but it helps you look more stylish and put together all week long, when you may not have had time to put as much thought into your outfit.

Get in the Green Spirit: 3 St. Patrick’s Day Outfit Ideas

Some holidays are meant for spending time with family. Christmas, Thanksgiving, and Easter all call up memories of little cousins and silly aunts fighting over the drumsticks. However, every now and then, there comes a holiday that seems to be specifically designed for the college student. Since it’s not October, I must be talking about St. Patrick’s Day! An excuse to drink, dance, dress-up, and generally partake in good old-fashioned college revelry. Here are three St. Patrick’s Day outfits for different occasions, with a drink selection to match! Choosing your outfit now will help to get you in the mood. Only a few weeks to go!

1. Colourful Casual

Even if you’re having a more laid-back St. Patrick’s Day, or you’re just not one for outrageous outfits, you can incorporate a little bit ‘o the Irish into your wardrobe for one day to enjoy the celebrations. The pop of green and the accessories make it festive, while the boyfriend shirt, leather belt, and worn-wash jeans give it a more relaxed feel.

2. Green Glam

The tights actually have little flecks of gold shimmer in them, which pick up on the outrageous shoes (but hey, when else can you get away with wearing those bad boys?) The headband is playful and the clutch it understated enough to pull it all together. Totally eye-catching and fun.

3. Costume Crazy

If you’re really in the mood to dress-up, your best bet is a costume. You can either pick up a store-bought one at a costume shop or sexy shop (like the one pictured below), or look at the elements of a typical costume and fashion your own (like I’ve done here). Just be sure to take lots of pictures and have a very Irish evening!

How to…Stay Motivated to Work Out: 5 Tips to Get You Back on Track

Ahh…the gym. Back on Dec 31 when you were toasting your New Year’s Resolutions, the gym seemed like a perfectly reasonable goal to sneak into you weekly schedule here and there. But somewhere between writing papers and going to parties, the gym just doesn’t seem as important as watching the season finale of The Bachelor. Sometimes all you need, though, is a fresh approach, so I’ve pulled together my top 5 tips to stay motivated to work out and reach your personal health and fitness goals. After all, bikini season will be here before we know it!

1. Trick the Clock

If every night you set your alarm for an ambition hour only to hit snooze every morning and miss you workout, you’re not doomed. Some people work out better in the morning, some at night, some in the afternoon, others at lunch time. Just because all your friends go for 6 am jogs doesn’t mean that time is right for you. Try working out at different times of day, and on different days of the week until you find the combination that works best for you. You may find yourself getting up early Saturdays to work out, while Tuesdays and Thursdays you prefer a pre-dinner routine. As long as you find the time that is easiest for you to maintain, that’s the right time for you. And don’t worry about all the hype about burning more fat first thing in the morning, the bottom line is, if you’re not able to get up and workout, you won’t burn any fat at all, so focus on finding a schedule that fits your needs, and the rest will be easy.

2. Inspiration Board

Sometimes all it takes is seeing another girl in great shape to kick our butts into gear, but with the cold weather still upon us, and everybody bundled up, it’s easy to overlook the envious bodies around us. That’s why an inspiration board can really help you get motivated. Put it somewhere you’ll look at not too often, but daily, like the inside of your closet door. Include cut-outs from fitness magazines of routines you like or body parts you wish you had (hey, those fitness models worked hard for those buns of steel, you might as well appreciate them). Don’t be afraid to include a snapshot or two of yourself when you were in particularly great shape to really motivate you to look your best.

3. Don’t Make Your Work-Out “Work”

Who says you have to go to the gym to have a great calorie-burning workout? If you’re sick of the treadmill routine, devote an hour or two to a fun activity that gets your heart pounding and your muscles aching. Why not try some pond hockey? Go snow-shoeing or cross-country skiing through trails in your area. Rent a board and take a quick lesson before hitting the hills on a snowboard. There are lots of ways to get out and get moving, even in the winter, where you’ll have so much fun you won’t even realize what great shape you’re getting in! Don’t like the chilly weather? Try signing up for a class at your gym, like pilates, or salsa dancing. The more different activities you incorporate into your workout routine, the more fun it will be, and the more motivate you’ll be to stay on track.

4. Get Social

A workout buddy is probably the best inspiration you can have. No one wants to make their friend go to the gym alone, and the more people in your fitness gang, the better, because there’s less chance that everyone is going to bail. Find some friends with similar fitness goals and work out at least one day a week when you can all exercise together. Having someone there to talk with (or maybe complain to) make things more fun and an activity you actually look forward to, rather than dread.

5. Grab the Gear

New work-out clothes alone can be motivation enough to hit the gym. Who wouldn’t want an excuse to show off their cute Victoria’s Secret Pink pants or lululemon top? Don’t forget a comfy pair of running shoes: talk to the sales person and explain what sort of activities you tend to do when you work out, they’ll help you find the best fit. For the high-tech girl, pedometers and heart rate monitors let you track your progress so you can set goals and see how far you’ve come without worrying about the number on the scale. Using fitness as an excuse for shopping is a fun way to reignite your motivation for working out.

Truth & Dare: Megan Fox’s “Toe Thumb”

Hey guys! Here’s my second installment of my Truth & Dare series. Click here to read the first installment, on the dating website BeautifulPeople.com.

Truth:

You have likely heard the rumours that Megan Fox needed a thumb-double to film certain parts of her Superbowl commercial for Motorola. During the close-ups of Megan texting, it is actually another actress’s hands. The advertisers chose to use a thumb-double because Megan has brachydactyly, a genetic condition that causes her thumbs to be shortened, also known as “toe thumb” or “clubbed thumb” because of the stubby appearance.

Since the rumours were confirmed, the media has jumped on the story, and scrambled for photos of her subtle imperfection. It seems that people take pleasure in the idea that someone who is hailed as being a perfect 10 in beauty, has a less-than-desirable aspect to her. It is comforting to people to know that the stars who seem like gods and goddesses on earth really are human, like us, after all.

Dare:

Rather than using this as an opportunity to rip on Megan Fox and try to pick her apart, why not use it to recognize that everyone has imperfections. Imperfections make us human, they make us real, and they make us beautiful.

My dare for this week is to look at what you may consider imperfections in yourself and start to recognize them as unique and beautiful. Start to take pride in what makes you special and quirky, rather than being embarrassed and trying to hide it. Remember that high fashion models are usually selected for their unique qualities (and the fact that they’re tall and skinny). A thicker eyebrow, a gap in your teeth, a birth mark, these are all features you can find on couture runways because modelling agencies seek out girls that don’t look like the picture-perfect mold, they want girls that are unique. Also remember that even girls who we assume are flawless, like Megan Fox, all have little imperfections of their own.

Try to remember when looking at yourself, and at the people around you, that if you have the right frame of mind, imperfections will only add to beauty, and not take away from it. Celebrate the things that make you different and compliment your friends on the things that make them different. Take some time to appreciate how beautiful and unique you truly are. Something every college girl should know.

How to…Transition Your Wardrobe from Winter to Spring: Three Transition Outfits

Hey guys! Last week I did a post on How to…Transition Your Wardrobe from Winter to Spring. To follow up on that article, I used the tips provided and pulled together three looks to give you some ideas to take it to real life.

Look 1: Going to Class

This look is comfortable and casual enough for everyday, but still looks pulled together. Chilly Night Out

How to…Get a Silky Smooth Shave

During the winter, dry skin and extra layers of clothing can put a damper on your shaving routine. But, you never know when you’ll be invited to a spontaneous hot tub party, and no one wants to be in that situation only to realize your legs or underarms are a disaster. Follow my tried and true techniques for the closest shave to get silky-smooth skin every time.

Choose Your Razor

While expensive razors may seem appealing, and come it pretty colours, they require you to change the blade weekly, which can be expensive. I used to use an expensive razor, but actually found it never gave that really close shave I was after. My secret now is to use men’s disposable razors. Because they’re designed to be used on a man’s face, where hair is finer and the shave has to be close, these always give a better shave than any women’s blade I’ve ever tried. They may not look as cute on your shower shelf, but the results are worth it.

Lather Up

What you use for shaving cream is up to you. If you have sensitive skin, you’ll want to opt for a shaving cream especially designed to fit your needs. If your skin isn’t sensitive, you can get away with just using you body wash and lathering up well. Using a loofah pouf also gently exfoliates your skin prior to shaving as you lather, which whisks away dead skin allowing for a closer shave. Even if you’re using shaving cream, gently applying it with a loofah is the best way to prep for shaving.

Shave

How you choose to shave is personal, depending on your skin sensitivity. However, especially with underarms, I recommend shaving in all directions: against the ‘grain’, with it, left, right, diagonal. Your hair doesn’t grow in one direction only, so you shouldn’t shave it one direction only. This technique ensures that each and every little hair is taken care of. Also, after shaving your underarms, gently tug the skin away from your body to make sure you reached every part, as it is something hard to see.

Scrub Down

This is my absolutely essential step for the smoothest shave of your life. As I noted above, exfoliating your skin whisks away dead skin, allowing for a closer shave. But, after you shave, there can be a build up of skin cells, bits of hair, soap, and oil that prevents your skin from getting that desired silkiness and can even cause discolouration. To remove this, invest in an exfoliating facial scrub that matches your skin sensitivity level. After you shave and rinse off the shaving cream/soap, gently apply the scrub in a circular motion all over the shaved skin, allow to sink in for a moment, then rinse off. You’ll be amazed at how touchable your skin becomes.

Lock in Moisture

As soon as you step out of the shower, before towelling off at all, apply a moisturizing cream or deodorant to the shaved skin. It will feel a little greasy at first as the cream mixes with the moisture on your skin, but after a minute of two, the moisture sinks in leaving your skin butter-soft and amazing.

Simple steps but, combined, will lead to the best shave ever. You’ll love the feel of your legs or underarms so much, you may actually look forward to shaving (and your boyfriend won’t complain either!) Why You Should (+ How to) Drink More Water

You may have heard it from your Mom, or you doctor, or you favourite magazine, but drinking 64 oz of water a day just doesn’t seem like a priority in your busy college girl lifestyle. Besides, if you don’t feel thirsty, you probably aren’t dehydrated, right? Wrong. In fact, if you’ve spent enough years being dehydrated, your body just gets used to the fact that it needs to run on less-than-enough water, so you don’t even recognise that it’s a problem. Well I’m here to give you lots of motivation with a list of ways that drinking more water can improve your life, and some simple ways to increase your daily water intake until it becomes a healthy habit that’s part of your lifestyle.

How It Helps

Weight: You may have heard that drinking more water can help you lose weight, but how? Simply put, your organs needs water in order to run properly, and when they’re not getting enough water, they can’t work as efficiently to perform other tasks: like metabolising fat. Plus, if you’re dehydrated, your body can start storing water because it doesn’t know if you have access to a fresh supply. This extra water shows up on the scale as “water weight”. In fact, drinking the recommended 8 cups of water a day for just a week has helped some people shed as much as 5 lbs of water weight, and several inches off their body as the bloating goes down. It seems like everyone is trying to drop a lb or two as the warmer weather approaches, start a healthy eating and exercise routine by amping up your water intake and you may be surprised with the results.

Skin: When your body doesn’t have enough water, it sucks it out of the organ that needs it the least: your skin! This leaves your skin in one of two bad scenarios: either it gets dried-out, turning red, itchy, and flaky, or it goes it to panic-mode when it recognizes the dryness and starts to over-produce oil, leaving your skin greasy, and prone to acne. You can wash your skin all you like, but if you’re not getting enough water, your body’s natural response will always be to leave the skin to fend for itself, and no amount of external action can fix it. Drinking the recommended amount of water will leave your skin smooth and healthy, with that youthful “glow” that is so ideal.

Hair and Nails: This aspect I haven’t researched outside of personal experience, but I know the more water I drink, the healthier, shinier, and stronger my nails and hair are. I started focussing on increasing my water intake last summer and, like magic, my dry brittle nails and hair were smoother, shinier, and growing to amazing new lengths without splitting or breaking! If you compare with the knowledge of how water affects your skin, it makes sense: if you don’t have enough water to go around, your body isn’t going to waste any extra moisture on less-necessary (at least biologically) parts, like hair and nails. So, drink up for super-model tips and locks.

Energy: Even my boyfriend’s gamer little brother agreed, a bottle of water is way better than a Red Bull for pepping you up. If you stayed up late studying (or maybe partying) what your brain and body needs most is water to make up for the sleep you lost. Extra water helps your organs and systems move efficiently and quickly, allowing you to stay awake and alert, even in that 8 am class. Plus, unlike Red Bull or Starbucks, there is no water “crash”. Since caffeine actually dehydrates your body, you should swap it out (or at least pair it) with a bottle of water to keep your mind and body working at full force all day long. This is also my secret weapon for exams: even if you got enough sleep, if your brain begins to become dehydrated, your memory can slip making it almost impossible to remember the right equation, date, author, etc. Bring a big bottle of water with you to your exams and drink throughout the entire test to keep your brain working in top form.

How to Get More

This takes some time to get used to, especially if you’ve spent years conditioning your body and routine to survive on 1 or less glasses of water a day. As you increase your water intake, you will naturally find yourself taking more trips to the bathroom, but this decreases with time. Think of your body as a plant in a dried-out pot of soil: this first few times you water it, the water just trickles through the soil and out the bottom, but after time, the soil begins to absorb the water and can hold more of it without leaking. Start with just a few small steps and before you know it, 64 oz may not be enough to hold all the water you down in a single day.

Fill A Jug: This is my mom’s trick and it works well. She got a glass jug and measured out 64 oz (8 cups) of water into it, then marked on the jug how much that was. Now, every night, she fills the jug to the 64 oz line and puts it in the fridge. Throughout the next day she pours a glass of water from the jug until it’s all gone. Seeing it right in front of you every time you open the fridge can be a really helpful technique, especially if you’re a visual learner. You can visually see you’ve only drank half the recommended amount of water, and that encourages you to have another glass.

Bring a Bottle: This is so important for college girls, because we’re in and out of classrooms, workrooms, and dormrooms all day long, making it difficult to have access to water at all times. Invest in one or two cute, reusable water bottles. Fill them up every night and stick them in the fridge to throw in your bag the next morning. I find I won’t even feel thirsty, but sitting bored in class with my cute Pink water bottle staring me down makes me naturally drink more water. It’s a simple and practical solution for the girl on the go.

Swap out the Soda: Any time you go to have a drink of something other than water (juice, soft drinks, coffee, etc) force yourself to have a glass of water first. If, after you had your water you still want the other beverage, go ahead, but chances are you were just thirsty and weren’t really craving the drink you thought you were. In fact, you may now be craving another glass of water as opposed to that Hawaiian Punch. Remember that soft drinks and coffee, or any caffeinated beverage, dehydrate your body and actually make you more thirsty, so always counter a caffeinated drink with at least an equal amount of water.

Be a Mindless Drinker: When you’re watching TV, surfing YouTube, going to the movies, or out to dinner, it’s easy to not focus on what you’re putting in your body. Normally , this is a bad thing: read, eating an entire bag of chips before you realize you opened them. But, if you make sure to grab a tall glass or bottle of water before you sit down to veg, you’ll sip the water just as quickly as you would munch away on junk food, without even thinking. Sometimes, adding a straw helps, because it makes it easier to drink and, hey, it’s fun! Ordering water at a restaurant is a great way to get more water: restaurants typically dole out oversized glasses and keep refilling, you can get over half your recommended water in a single sitting. Plus, water is free, so your cheque will be a little lighter, too!

It takes time, but incorporating more water into your lifestyle is an essential part of your health and well-being (and your beauty, too!) Start with small increases and work your way up to 64 oz and beyond. Remember to increase your water intake even more if you’re exercising or spending a lot of time in the heat or sunlight. Don’t think of it as a chore, but part of your overall fitness, health, and beauty routine. Increase your water intake for your mind, body, and lifestyle…something every college girl should know.

How to…Cook: Mini Pot Pies

This is the second post in my series on how to cook. The first post covered my favourite recipe websites, which I used to discover this recipe for miniature pot pies. I actually adapted the recipe a bit to make it easier, and added some chicken. However, this recipe is really adaptable so I recommend reading Martha’s, reading mine, and then doing your own twist on it depending on your tastes. Don’t like carrots? Leave ‘em out. Want some extra garlic? Throw it in. This is a really simple recipe that turned out delicious. I froze mine and gave a couple to my Grandma, which she loved, so these are not only college-girl, but also granny-approved.

Miniature Chicken Pot Pies

makes 3 pies

Tools:

oven and stove

large frying pan

chopping knife

measuring spoons

spatula or wooden spoon

vegetable peeler

cheese grater

garlic press (optional)

three 4″ ramekins (I bought mine at the dollar store, they look like this)

Ingredients:

1 sheet of frozen puff pastry, thawed

2 green onions, sliced thinly

1 tablespoon extra virgin olive oil

6 pearl onions, peeled and quartered

6 baby carrots, sliced

6 button mushrooms, washed and sliced

1 tsp raw ginger, peeled and finely grated

2 tsp garlic, peeled and finely chopped or pressed

½ chicken breast, cooked and torn into bite-size pieces

1 tbsp margarine

1 cup chicken stock

1-2 tbsp white flour

salt and pepper to taste

Directions:

1. Start by thawing out the puff pastry. You made need to do this the day before, so check the packaging and read their directions for how to thaw the pastry. Make sure to only thaw one sheet, that’s all you’ll need.

2. Place one of the ramekins top side down on the puff pastry and carefully cut a circle about ½ inch bigger than the rim of the ramekin. Do this 2 more time and place the pastry circles in the fridge while you cook the filling. The circles don’t have to perfect: as the pastry puffs up it will all look the same anyway.

3. Cook your chicken breast however you normally prepare it (whether it’s poaching it, frying it, or baking it) until cooked through (the chicken should be white and opaque throughout—cut in to see) and then tear it into bite size pieces using two forks and ripping it apart. Put ½ the meat in the fridge, you can use it in salads, sandwiches, or stir-fries for the next two days.

4. Chop and prepare all your vegetables, making sure they’re all clean and peeled if needed.

5. Put your frying pan on the stove over medium heat and add the olive oil.

6. Add the all the ingredients on the list from the green onions to the garlic and simmer for about 5 minutes, until the veggies are mostly cooked.

7. Add the chicken meat, margarine, and chicken stock. Allow to simmer for another 5 minutes. Turn your oven on now to preheat to 400 F.

8. To thicken up the sauce, slowly add the white flour a tablespoon at a time until it gets to the consistency you like.

9. Add the salt and pepper to taste and spoon the mixture evenly into the ramekins.

10. Take the pastry circles out of the fridge and place them over the tops of the ramekins, pinching the sides to secure them in place.

11. Bake at 400 F for 18-20 minutes, or until the pastry puffs up and is golden brown.

If you want to freeze your pot pies, allow them to cool completely, then cover with tinfoil and put in the freezer. To reheat after freezing, remove the tinfoil and either bake at 350 F for 20 min or microwave for about 5 min.

Since this recipe is so long, it may seem a little daunting, but I’ve really done the hard work and cut out any unnecessary steps I noticed when making my own pot pies. You’ll see that it’s not much more difficult than frying up some veggies, adding a bit of chicken stock and flour to make a sauce, and covering them with pre-cut pastry rounds before baking in the oven.
